"Skordalia" with bread (garlic dip)

Total preparation time  :  15  minutes
Quantity this recipe will make  :  a big cup

List of Ingredients :
  • 4 cloves of garlic
  • 4 thick slices of bread
  • 4 tbsp. olive oil
  • 1 tbsp. vinegar
  • 1 tbsp. lemon juice
  • salt
Preparation Instructions :

Remove the crusts from bread and soak in water. Peel garlic cloves, remove sprout if exists and crush them. Squeeze the water out of the bread. Put bread, crushed garlic, vinegar, lemon juice and salt in a mixer. Blend, while adding the oil drop by drop, until  the mixture becomes smooth.

Comments : Lovely served with fried fish.

"Skordalia" with potatoes (garlic dip)

Total preparation time  :  40 minutes
Quantity this recipe will make  :  a big cup

List of Ingredients :
  • 4 cloves of garlic
  • 4 potatoes
  • 5 tbsp. olive oil
  • 2 tbsp. lemon juice
  • salt
Preparation Instructions :

Boil, peel and mash the potatoes. Peel garlic cloves, remove sprout if exists and crush them. Put mashed potatoes, crushed garlic, lemon juice and salt in a mixer. Blend, while adding the oil drop by drop, until  the mixture becomes smooth. If the mixture appears too dry, add a little water.

Comments : Lovely served with fried fish.
